3 Easy + Healthy Weeknight Meals!

I'm not sure if you were aware of it, but I've been doing a series of posts over on The Pioneer Woman's Food & Friends section: Easy Weeknight Meals!

It's been fun to come up with ideas for meals that are easy to prepare, healthy, and completely delicious. 

Here are the first three installments: 


1) Marinated Chicken Salad

When the weather gets warmer, we mostly want fresh, cold things for supper. This marinated chicken salad is full of healthy fats, proteins, and veggies. One of our all-time favorites!



2) Shrimp Spring Roll Bowls

Have you ever made spring rolls at home? If you have you know that they can be a bit fussy. These spring roll bowls simplify the process and make it doable for a weeknight meal! SO good with the peanut dressing...




3) Veggie-Stuffed Fried Rice

Fried rice is such a great weeknight meal. It's fast and delicious and satisfying. In my version I included 9 different veggies! This is a great way to get your husband/kids to eat more vegetables. :)
