Hey, friends! I’m back with another What I Ate Wednesday! I polled you guys over on my Instagram stories, and you said you’d rather see a What I Ate Wednesday post next instead of a grocery haul. So here we are!

Here’s everything I ate last Wednesday:

Breakfast:

I had meal prepped some roasted veggies for my Roasted Veggie Breakfast Bowls, but I decided to get creative and put them in an omelette instead. I made a 2-egg omelette, filled it with the veggies, and topped it with some Parmesan cheese. It was delicious!

 

 

What I Ate Wednesday

Lunch:

I’ve been trying to be more intentional with my lunches (instead of just scrounging for leftovers or throwing something together at the last minute). So I started planning my lunches out for the week. I choose 3 different lunches and make each one twice. So far I’m loving it!

Here I had a Kale Avocado Caesar Salad with Sweet Potato Fries (recipe from Pinch of Yum). I added some marinated chicken for added protein.

Snack #1:

You guys, I went live on Instagram for the first time ever! It was nerve-wracking, and I’m sure I sounded like an idiot. But it was actually kind of fun! I did a demonstration of how I make my Sugar Free Matcha Latte.

Supper:

I had my sister over for supper. We had homemade ramen noodles: one of my favorite things ever! I used organic ramen noodles and added homemade and Pacific bone broth, shredded carrots, onions, mushrooms, peas, ginger, green onions, homemade ginger sausage, soft boiled eggs, and seaweed snacks. I also added some ginger carrots to the mix. Yum!

Snack #2:

After the kids were in bed, Reuben said, “Why don’t you guys make cookies?”

So my sisters and I whipped up a quick batch of my Perfect Chocolate Chip Cookies. We cut the sugar nearly in half and used mostly organic ingredients (and Kerrygold butter). And of course I had to have a fresh one with milk. BUT I almost instantly regretted it. I had been successfully fighting off the illness that had been making its rounds, and almost as soon as I finished my cookie, my throat felt scratchy. It definitely had an effect on me. The next few days I didn’t feel so well. That cookie was delicious, but I don’t think it was worth it. I’ll remember that next time I’m trying to stay healthy. Moral of the story: trust your instincts if you feel like you shouldn’t indulge in a sugary treat.

They’re lower in calories and carbs compared to regular ramen noodles. This ramen recipe is like a stir fry with broth – perfect for the still chilly weather in Chicago. If you happen to have fresh vegetables on hand, you can use pretty much any vegetables in this chicken ramen.
